BEEF TENDERLOIN ALA CLOCHE

Ingredients:

1 to 1-1/2 lb. beef tenderloin trimmed of all excess fat
1 clove garlic
salt
pepper (freshly ground)
carrots
potatoes
onions

Directions:
Preheat oven to 375º F. After the tenderloin has been trimmed of all excess fat, rub garlic, salt and pepper all over the meat. Cut the carrots, potatoes and onions into small pieces and arrange around tenderloin in the La Cloche dish. Season with salt and pepper to taste. Cover with lid and bake for 30 to 40 minutes or until desired degree of doneness is attained.
